As the leaves turn and the air grows crisp, we find ourselves well into Fall—a truly treasured time of year for us bakers and home-cooks. For me, few things encapsulate the warmth and comfort of this season more perfectly than the aroma of a freshly baked honey cake wafting through the house.
It was just a few days ago, while delving into my extensive collection of French cookbooks, that I stumbled upon this incredibly tempting and surprisingly simple honey cake recipe. Its origins lie in the heart of the French Jura region, a place renowned for its pristine natural beauty. This particular recipe immediately caught my eye, featuring the rich depth of fir honey, the vibrant zest of winter citrus, and a generous abundance of earthy walnuts. Naturally, I had to make it. And yes, as anticipated, I fell utterly in love with every bite! What made this experience even more delightful was my Canadian husband’s reaction; typically not one for overtly citrusy flavors, he absolutely adored it and has already requested it again. A true win-win-win situation in my book!

A Taste of the Jura: Mountains, Forests, and Honey
As I mentioned, this delightful recipe hails directly from the majestic mountains of the French Jura, a stunning region nestled in North-Eastern France, right along the picturesque Swiss Border. This gorgeous area is widely celebrated for its lush evergreen forests, which are not only breathtakingly beautiful but also serve as the source of some of the most delicious and distinctive honey you’ll ever taste. The Jura’s unique ecosystem, with its diverse flora, contributes to honey with unparalleled depth and complexity.
I cherish the most heartwarming childhood memories of spending family ski vacations amidst these beautiful, snowy mountains. The crisp air, the glistening snow, and the cozy evenings were always capped off with a special tradition: on the last vacation day before embarking on our journey home, we would meticulously fill our suitcases with large jars of local honey. Let me tell you, when you’re a child, the sight of those big jars of golden deliciousness seemed almost magical and unreal! This treasured ritual instilled in me a deep appreciation for the Jura’s natural bounty and its unique culinary offerings.
It comes as no surprise, then, that honey features prominently in many of the Jura region’s traditional recipes. And this particular walnut cake has quickly become my absolute favorite among them! I adore this cake because it strikes a perfect balance: it is both wonderfully bright and profoundly comforting, instantly transporting me back to those cherished childhood memories. The tangy citrus flavors of tangerine blend seamlessly with the mellow, resinous sweetness of fir honey, creating a harmonious symphony on the palate. This is then followed by the satisfying crunch and nutty richness of the walnuts, which add a delightful textural contrast. Fir honey, known as *miel de sapin* in French, possesses a bold, deep, and distinctively malty taste, so much so that even a single tablespoon is enough to infuse the entire cake with its fragrant essence. However, if fir honey isn’t readily available, you can easily substitute it with any kind of amber or dark honey you prefer – forest honey or even buckwheat honey would work exceptionally well here, lending their own unique character to this rustic French delight.
While the original recipe for this traditional Jura cake typically calls for oranges, I decided to adapt it slightly. Having a generous supply of sweet, plump tangerines on hand, I chose to use them instead – and the cake turned out absolutely delicious! The tangerines added a vibrant, slightly sweeter citrus note that was simply irresistible. With winter steadily approaching, I’m already contemplating trying it with seasonal clementines next time for another delightful variation.
