- ½ cup packed dark brown sugar
- ¼ cup fresh lime juice
Instructions

Combine allspice, salt, pepper and cloves in a small bowl. Rub spice mixture all over the roast.

Heat olive oil in a skillet and sear roast on all sides until well browned.

While the roast is browning, combine the brandy, beef broth, and brewed coffee in a separate bowl. Reserve 1/2 cup of this broth mixture and set it aside for later. Add the minced garlic and bay leaves to the remaining broth mixture.

Once seared, remove the roast from the skillet and place it into your slow cooker. Carefully drain any excess oil from the skillet, then return the skillet to the stove. Pour the broth/garlic/bay leaf mixture into the skillet. Bring it to a gentle boil, scraping up all the flavorful brown bits from the bottom of the pan. Reduce heat to low and simmer for 3-5 minutes. Pour this heated mixture over the roast in the slow cooker.
