Bottom Graham Cracker Crust Layer (for no bake crust option):

  • 10 ounces regular, honey or vanilla graham crackers, finely ground using a food processor or manually crushing (2 5-ounce packages)
  • 6 tablespoons of unsalted butter melted and cooled *I give a range for the amount because I have found that depending on the humidity, you may need more or less butter

Bottom Pecan Crust Layer (for baked crust option):

  • 2 cups all-purpose flour
  • 1 cup unsalted butter melted and cooled
  • ½ cup finely chopped or food processor processed pecans great for the mini food processor
  • ¼ cup granulated white sugar

Cream Cheese Layer (2nd Layer):

  • 16 ounces cream cheese, softened to room temperature 2 8-ounce packages
  • 1 cup granulated white sugar
  • 2 tablespoons fresh squeezed lemon juice 2 tablespoons works best for me

Banana Cream Pudding Layer (3rd Layer):

  • 6.8 ounces instant banana cream pudding mix 2 3.4-ounce packages
  • 4 cups milk you can also do 3 1/2, if you want it slightly thicker

Whipped & Toppings Layer (4th Layer):

  • 8 ounces whipped topping I used Cool Whip, you can substitute the same amount whipped cream
  • 3 chopped pecans or walnuts this would go if you chose the bottom pecan crust option too
  • 1 medium banana sliced right before serving

OPTIONAL – Bananas Foster Sauce for Serving (5th Layer):

  • 1 stick salted butter 1/2 cup
  • 1 cup dark brown sugar
  • ¾ cup heavy whipping cream
  • ½ cup dark rum
  • 2 medium bananas sliced in half and then lengthwise in thick slices
  • ½ cup chopped pecans or walnuts
  • ¼ tsp ground cinnamon
  • ½ tsp vanilla extract optional

Before You Begin

For easy and even spreading of layers, we suggest using an offset spatula, ensuring it’s clean before transitioning to a new layer. To achieve more defined layers when serving after refrigeration, simply run a butter knife along the edges of the pan to “wipe” the sides clean. For crisper, more defined slices, consider freezing the Bananas Foster Lush overnight (at least 6 hours) before cutting. When serving from frozen, use a sharp knife to cut through the bottom crust first, then use your spatula to lift. The dessert will defrost fairly quickly at room temperature. Note: Do not freeze if using homemade whipped cream, as it may not hold its texture as well as store-bought whipped topping like Cool Whip when frozen.

Instructions

  • Bottom Graham Cracker Crust (for a no-bake option): In a medium-large bowl, thoroughly mix the melted and cooled unsalted butter with the finely ground graham crackers. Press this mixture firmly into the bottom of a 9×13 inch baking pan. Cover the pan and chill in the refrigerator until you’re ready to add the next layer.
  • Bottom Pecan Crust Layer (for a traditional baked crust option): Preheat your oven to 350 degrees F (175°C). In a large mixing bowl, combine the all-purpose flour, melted and cooled butter, finely ground pecans, and 1/4 cup granulated sugar. Mix until well combined. Press this mixture evenly into the bottom of a 9×13 inch baking pan. Bake for 20-25 minutes (25 minutes often yields the best golden brown finish) or until golden brown. Allow the crust to cool completely before proceeding with any additional layers.
  • Cream Cheese Layer (2nd Layer): Using a hand-held electric mixer, beat together the softened cream cheese, 1 cup of sugar, and 1-2 tablespoons of fresh squeezed lemon juice (2 tablespoons generally provide the best flavor balance). Continue mixing until the mixture is completely smooth and uniform. Carefully spread this creamy mixture evenly over your prepared and cooled bottom crust (either graham cracker or pecan).
  • Banana Cream Pudding Layer (3rd Layer): In a large mixing bowl, whisk together the milk and instant banana cream pudding mix until thoroughly combined. Continue whisking for about 4-5 minutes, or until the pudding has thickened and set. Gently spread this banana cream pudding layer evenly over the cream cheese mixture.
  • Whipped Topping Layer & Garnish (4th Layer): Spread the thawed whipped topping evenly on top of the banana cream pudding layer. For even more defined slices, you have the option to freeze the assembled Bananas Foster Lush overnight at this stage (without the warm Bananas Foster sauce). Important note: If you are using homemade whipped cream as a substitute, do not freeze, as it may not hold up as well as frozen whipped topping like Cool Whip. Just before serving, slice and arrange the fresh banana on top, and optionally sprinkle with chopped pecans or walnuts.

Optional Bananas Foster Sauce (for Serving):

  • Bananas Foster Sauce for Serving: In a large, heavy skillet set over medium heat, melt the salted butter. Add the dark brown sugar and stir until it is fully dissolved and combined with the butter, forming a caramel. Stir in the heavy cream, followed by the sliced bananas and chopped nuts. Allow the mixture to gently bubble, but ensure it does not burn. Carefully pour in the dark rum. If you wish to ignite the rum (flambé), use a lighter wand to light the mixture; it should extinguish on its own as the alcohol burns off. Immediately remove the skillet from the heat, stir in the ground cinnamon, and the optional vanilla extract.
