  • ¼ cup (approximately 60g) high-quality chestnut spread (such as Clément Faugier)
  • 2 tablespoons unsweetened cocoa powder

For extra insulation and to help prevent burnt bottoms, it’s highly recommended to double-stack your baking sheets or use silicone baking mats. Set these aside.
  2. The Dry Ingredients: In the bowl of a food processor, combine the almond meal, powdered sugar, and cocoa powder. Process these dry ingredients together for one to two minutes until they are ultra-fine and well combined. This step is critical for smooth macaron shells, as it further grinds the almond meal and helps distribute the cocoa evenly. Stop the processor, scrape down the sides and bottom of the bowl, and process again for another minute.
  3. Sifting for Smoothness: Carefully sieve the processed almond-sugar-cocoa mixture into a clean, dry bowl. Gently press the mixture through the sieve with a spatula. Discard any larger bits of almond that remain in the sieve; these coarser pieces can affect the texture and appearance of your macaron shells. Reserve this finely sifted mixture.
  4. Creating the Meringue: Pour the room-temperature egg whites into a large, impeccably clean stainless steel bowl (or the bowl of a stand mixer). Using a handheld or stand mixer, begin beating the egg whites at medium-high speed. As they start to become bubbly and white, and the whisk leaves faint marks, slowly and gradually add the granulated sugar. Continue beating until stiff, glossy peaks form. The meringue should be firm enough to hold its shape when the whisk is lifted, and appear shiny. Overbeating can cause cracks, while underbeating will lead to weak shells.
  5. The Macaronage Technique: This is the most crucial step! Add the coffee extract to your stiff meringue, along with approximately one-third of the reserved almond-sugar-cocoa mixture. Using a rubber spatula, begin the delicate “macaronage” process. Gently fold to incorporate the dry ingredients into the meringue. To do this, slide the spatula down to the bottom of the bowl, then gently bring it back up, folding the mixture over itself. Repeat this process, adding the remaining almond-sugar-cocoa mixture in two more additions. Always fold gently and deliberately, never beating or stirring vigorously. The goal is to achieve a “lava-like” consistency – a batter that flows slowly and steadily off the spatula, forming a ribbon that eventually merges back into the main batter within 20-30 seconds. Be careful not to overmix, as this can lead to flat, oily shells.
  6. Piping and Resting: Transfer the perfectly mixed macaron batter into a pastry bag fitted with a round ½-inch tip. Pipe uniform rounds of batter onto your parchment-lined baking sheets, leaving a small space between each macaron.   8. Cooling and Assembly: Once baked, remove the macaron shells from the oven and allow them to cool completely on the baking sheets. This is vital; attempting to remove them while warm will likely result in breakage. Once thoroughly cooled, carefully peel the shells from the parchment paper. Pair shells of similar size. Pipe or spread a generous amount of the prepared chocolate-chestnut buttercream filling onto the flat side of one macaron shell, then gently sandwich it with a matching shell.
