- 1 large egg yolk, lightly beaten
- ¼ cup finely grated Gruyère, Comté, or any other hard, flavorful cheese (aged Cheddar, Parmesan, Swiss, and so on)
- 2 tbsp very finely chopped or ground walnuts (optional—see clever tip)
- Freshly ground black pepper
