a delightful combination of smoky Gouda cheese, savory sun-dried tomatoes,
crisp pickles, and creamy mayonnaise, these sliders are a guaranteed hit.
Plus, they’re a fantastic way to use up leftover chicken!

Why You’ll Love These Gouda Chicken Sliders
These aren’t your average sliders! The unique combination of smoky Gouda,
sun-dried tomatoes, juicy chicken, and tangy pickles creates an
unforgettable taste experience. Using pre-cooked chicken makes this recipe
incredibly quick and convenient, especially when using leftovers. Simply
layer the ingredients on slider buns, bake until golden brown, and brush with
a flavorful butter and Everything Bagel Mix topping. Who doesn’t love a
quick, easy, and delicious appetizer?
This recipe was born out of a spontaneous culinary collaboration between Chef
Antoine and myself. We were looking for a dish to bring to a friend’s going
away party. Antoine wanted to feature chicken and sun-dried tomatoes, and
my mind immediately jumped to Gouda cheese, inspired by the success of my
Gouda and sun-dried tomato cheese ball. The pairing turned out to be a match made in appetizer heaven! These
sliders are perfect for any occasion.

Ingredient Spotlight and Smart Substitutions
Chicken: This recipe calls for 1 1/2 pounds of cooked chicken
breast, making it an ideal way to use up leftovers. For convenience, you can
also use rotisserie chicken from the store. Shredded or diced chicken works
well. If you are not a fan of chicken, consider using turkey.
Cheese: We adore Gouda cheese, especially the smoky variety!
It adds a wonderful depth of flavor to these sliders. If you can’t find Gouda,
other similar cheeses like Edam, Havarti, Fontina, or Monterey Jack will work
perfectly. For a little heat, Pepper Jack would be an excellent choice. A mild
provolone is another option.
Condiments: Sliced pickles, sun-dried tomatoes, and mayonnaise
are key to the flavor profile of these sliders. To elevate the taste even
further, the buns are brushed with melted butter and sprinkled with Everything
Bagel Mix. For an extra kick, substitute the regular mayonnaise with
horseradish mayo! Adjust the amount of each condiment to your preference.
Buns: Regular slider buns or Hawaiian slider buns both work
fantastically in this recipe. Hawaiian rolls are a popular choice for sliders
because of their slight sweetness. Make sure to get buns that are the same
size and shape to ensure even cooking.

- Preheat your oven to 375°F (190°C).
-
Cut the cooked chicken into smaller pieces that will fit nicely on the
slider buns. This makes it easier to eat and ensures even distribution of
the chicken. -
On a
baking sheet, arrange all the bottom slider buns. Using a baking sheet lined with
parchment paper makes for easy cleanup. -
Layer the ingredients in the following order: pickles, chicken, sun-dried
tomatoes, and shredded cheese. Don’t add the top bun yet. This layering
technique ensures each bite is packed with all the flavors.

-
Place the baking sheet in the preheated oven and bake for approximately 5
minutes, or until the cheese is melted and bubbly. -
Remove the pan from the oven and add a dollop of mayonnaise to the top of
the melted cheese on each bun. The mayonnaise adds moisture and richness to
the sliders.
-
Place the top buns in place, then brush with melted butter and sprinkle
generously with
Everything Bagel Mix. The butter and Everything Bagel Mix add a crunchy, savory topping that
perfectly complements the cheesy filling.
-
Bake for another 20 minutes, or until the tops of the buns are golden
brown and the sliders are heated through.
Frequently Asked Questions & Expert Tips for Perfect Sliders
Absolutely! To prepare the sliders in advance and store them in the
refrigerator, I recommend layering the shredded cheese as the first layer
on the bottom bun. This creates a barrier between the moist ingredients
and the bun, preventing it from becoming soggy. Layer all the ingredients,
then cover the dish tightly with plastic wrap. When you’re ready to bake,
continue with the recipe as instructed, adding a few extra minutes if
needed since they’re going into the oven chilled.
Store cooled leftover sliders in an airtight container in the refrigerator
for up to 3 days. Reheat them in a 350°F (175°C) oven. If the tops of
the buns start to brown too quickly while reheating, simply remove them and
add them back on once the other ingredients are warmed through.
