  • I used 16 key limes to get this much juice. There are roughly 18-20 key limes in one pound, but this can vary.
  • You will likely have some graham cracker crumb mixture left over. It’s always better to have too much than not enough, so don’t worry if you don’t use it all.
  • Please be sure you are using sweetened condensed milk NOT evaporated milk. These are two very different products and are not interchangeable in this recipe.
  • We are using pre-crushed graham cracker crumbs that are readily available at most grocery stores. Alternatively, you can easily crush about 10-12 full sheets of graham crackers yourself. This can be done in a food processor for a fine crumb or by placing them in a large zip-top baggie and crushing them with a rolling pin until you achieve 1 ½ cups of crumbs.

Instructions

  • Preheat oven to 350°F (175°C).
  • Line a 12-cup muffin tin with paper cupcake liners.
  • Combine crust ingredients (graham cracker crumbs, granulated sugar, melted butter) in a bowl with a fork until well mixed.
  • Place 2 level tablespoons of crust mixture into each paper liner and press down firmly to create an even base. You may not use all the crumbs; feel free to reserve some for garnish.
