  • ½ tsp kosher salt, or fine sea salt
  • 1 cup milk
  • 2 eggs
  • ¼ cup vegetable oil
  • 1 tsp pure vanilla extract
  • ¾ cup fresh cranberries, or frozen unthawed cranberries, each berry cut in half
  • ½ cup dried cranberries, coarsely chopped
  • ½ cup chopped walnuts
  • ½ cup granola cereal of your choice, or 1/2 cup (40 g) old-fashioned oats

To serve (optional)

  • maple butter (see note)

Instructions

  • Preheat your oven to 350°F (175°C). Prepare a muffin pan by lining it with paper cups or greasing it thoroughly.
  • In a large mixing bowl, combine the dry ingredients: both all-purpose and whole wheat flours, old-fashioned oats, maple sugar (or granulated sugar), baking powder, baking soda, and salt. Whisk these together until well combined. In a separate, medium bowl, whisk together the wet ingredients: milk, eggs, vegetable oil, and pure vanilla extract. Pour the wet mixture over the dry ingredients. Stir gently, just until everything is combined and no dry streaks of flour remain; be careful not to overmix.
