Using a double boiler setup (saucepans with about 2 inches of simmering water, then removed from heat, with bowls placed over), gently melt each chocolate, stirring frequently until completely smooth and free of lumps. Keep bowls over the warm water to maintain fluidity.
- Dip Strawberries: Remove the chilled sheet pan from the freezer. Hold a strawberry by its skewer and dip it into one of the melted chocolates, rotating to ensure an even coating. Lift the strawberry, allowing any excess chocolate to drip back into the bowl for a thin, smooth layer. Place the dipped berry onto the chilled, lined sheet pan. Repeat this process with all strawberries, alternating chocolate colors to create a festive mix.
- Decorate (Optional): While the chocolate on each strawberry is still wet and tacky, immediately roll it in your chosen sprinkles, coarse sugar, or nonpareils for full coverage. Alternatively, once a base layer has slightly set, use a fork to drizzle contrasting melted chocolate or candy melts over the strawberries, or create two-tone dips by re-dipping a portion into another color.
- Chill to Set & Serve: Once decorated, place the sheet pan with your strawberries back into the refrigerator for approximately 15 minutes to allow the chocolate to fully harden. After 15 minutes, remove them from the refrigerator to prevent condensation (sweating) from forming on the chocolate. Serve at a cool room temperature for the best flavor and texture. Enjoy within 24-48 hours for optimal freshness.
