  • 3/4 cup 180 ml red lentils, thoroughly rinsed and drained
  • 1/2 cup 125 ml finely diced celery (about 1 large rib)
  • 1/2 cup 125 ml finely diced carrot (about 1 large carrot)
  • 1/2 tsp 2 ml kosher salt, or fine sea salt
  • Freshly ground black pepper

Instructions

  • In a large saucepan, heat the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook, stirring, for 1 minute more.
