Lightly spray a 13×9 inch baking pan with cooking spray to prevent sticking. Arrange the onion rings evenly across the bottom of the pan; they will act as a flavorful and aromatic bed for your fish.
  2. Sear the Fillets: Gently rinse your striped bass fillets under cold water and pat them thoroughly dry with paper towels. Drying is key for a good sear. Heat a small amount of canola oil (or your preferred high-heat cooking oil) in a cast iron skillet over medium-high heat until shimmering.
