The Allure of Raspberry Matcha: A Symphony of Flavors
The appearance of the first local raspberries at the market is always a welcome sign, inspiring us to craft desserts that truly celebrate their fresh, seasonal bounty. While macarons are undeniably elegant pastries, their often elaborate packaging can sometimes overshadow their incredible potential as a canvas for showcasing seasonal ingredients. This particular recipe for Fresh Raspberry Matcha French Macarons is a testament to that philosophy, highlighting the natural sweetness and delicate tartness of raspberries in a truly spectacular way.
The heart of these macarons lies in the fresh raspberry buttercream. Crafted with the absolute minimum of sugar, it allows the authentic fruit flavor to shine through. This vibrant filling, combined with the distinct earthy notes of high-quality matcha green tea powder in the shells, creates a perfectly balanced and utterly irresistible experience. Each bite delivers a melting crunch from the delicate shells, followed by the creamy, fruity burst of the buttercream, culminating in a sophisticated flavor profile that will surprise even the most discerning dessert lovers and might just convert those who claim not to have a sweet tooth.
For an added layer of freshness and a delightful textural contrast, consider tucking a small piece of fresh raspberry into the center of the buttercream filling before assembling the macarons. However, it’s important to note that if you choose this option, these particular macarons are best enjoyed immediately. Freezing them with fresh fruit inside could lead to the shells becoming soggy upon defrosting, compromising their signature texture.

Fresh Raspberry Matcha French Macarons
Ingredients
For the Fresh Raspberry Buttercream
- 125 ml mashed fresh or thawed frozen raspberries
- 12 g granulated sugar
- 113 g unsalted butter, room temperature
- 240 g powdered sugar, sifted
- 2 ml pure vanilla extract
- 1 ml kosher salt, or fine sea salt
For the Macaron Shells
- 3 large egg whites, separated two days in advance, stored in an open container in the fridge (about 3.5 oz/100 g)
- 210 g powdered sugar
- 125 g almond flour
- 10 ml matcha green tea powder
- 30 g granulated sugar
- Green gel food coloring
To Assemble
- Fresh raspberries (optional)
Instructions
-
For the fresh raspberry buttercream: In a small bowl, combine the mashed raspberries with the granulated sugar. Allow this mixture to macerate at room temperature for 30 minutes. After 30 minutes, strain the mixture, pressing it firmly with the back of a spoon to extract all the juice. Reserve the vibrant raspberry juice and discard any coarse seeds and solids.
-
In the bowl of a stand mixer fitted with the paddle attachment (or a large mixing bowl if using a hand mixer), cream the room temperature butter until it becomes light and fluffy. Gradually add the sifted powdered sugar, mixing at low speed initially to moisten the sugar and prevent a cloud, then increasing the speed to fully incorporate. Stir in the reserved raspberry juice, pure vanilla extract, and kosher salt. Beat at high speed until the buttercream is wonderfully light, airy, and fluffy. Transfer this delectable frosting to a pastry bag fitted with a round tip. Set aside at room temperature, or refrigerate if preparing in advance.
-
For the macaron shells: *It is crucial to allow the aged egg whites to return to room temperature at least one hour before you begin making the macaron shells. This aids in achieving proper meringue volume.*
-
In the bowl of a food processor, combine the powdered sugar, almond flour, and matcha green tea powder. Process these dry ingredients together for 30 seconds to one minute, ensuring they are thoroughly incorporated and finely ground. Sift this mixture through a fine-mesh strainer to remove any lumps or larger bits of almond, which could affect the smoothness of your macaron shells.
-
In the clean bowl of a stand mixer fitted with the whisk attachment (or a large stainless steel mixing bowl if using a hand mixer), whisk the room temperature egg whites on medium-high speed until they become frothy. Begin adding the granulated sugar, one tablespoon at a time, continuing to whisk at medium-low speed. Once all the sugar is added, increase the speed to medium-high and whisk until the egg whites are bright white, glossy, and form stiff, firm peaks. At low speed, gently mix in a few drops of green gel food coloring until you achieve your desired matcha green hue.
-
Carefully add the sifted almond and powdered sugar mixture to the prepared egg whites. Using a flexible silicone spatula, gently fold in the dry ingredients using the macaronage technique: slide your spatula all the way to the bottom of the bowl and come back up to the top, folding the batter over itself. Repeat this motion approximately 6 times to initially incorporate the dry ingredients, then continue folding for a total of about 14 times. The goal is to reach a lava-like consistency, where the mixture drops from the side of the spatula in a slow, lazy ribbon. It’s crucial to start testing for consistency early to avoid overfolding, which can lead to flat macarons.
-
Prepare your baking sheets by stacking two baking sheets together for better heat distribution. Line the top sheet with parchment paper. If you’re not using pre-cut parchment, ensure it fits perfectly flat across the bottom of the sheet to prevent any warping that could affect macaron shape. If desired, slide macaron templates underneath the parchment paper as a guide for even piping.
-
Transfer the prepared macaron batter to a pastry bag fitted with a ½-inch (1.25-cm) round tip. Pipe 1 ½-inch (3.8-cm) rounds of batter onto the parchment-lined baking sheet. Ensure the rounds are evenly spaced but can be relatively close, as macarons will not expand significantly outwards during baking.
-
Gently slide the macaron templates out from under the parchment paper, if you used them. For an extra touch of matcha flavor and visual appeal, use a small fine-mesh strainer to lightly sprinkle additional matcha green tea powder over the piped shells. Let the piped shells rest on the baking sheets for 20 to 30 minutes. This resting period, known as “croûtage,” allows a skin to form, which is essential for the iconic “feet” of the macarons.
-
Preheat your oven to 275°F (135°C), ensuring a rack is set to the middle position. Bake each sheet of macaron shells for 13 to 16 minutes. Macarons are done when the shells are firm on their feet; gently tap them with the tip of a finger – if they don’t wiggle, they’re ready.
-
Allow the baked shells to cool completely to room temperature on the baking sheets before attempting to remove them. This usually takes about an hour. Rushing this step can cause the shells to break.
-
To assemble the macarons: Carefully pair same-sized shells together, laying them side by side on your work surface. Pipe a generous amount of the fresh raspberry buttercream over half of the shells. For an added delightful surprise, tuck a small piece of fresh raspberry into the center of the filling (optional, see notes below). Gently place the second shells over the filling, pressing lightly to secure.
-
STORAGE: For the best flavor and texture, store the assembled Raspberry Matcha French Macarons in an airtight container and refrigerate them overnight before indulging. This allows the flavors to meld beautifully and the shells to soften to the perfect chewy consistency.
French macarons will keep well, refrigerated, for up to 3 days. You can also freeze these assembled macarons in an airtight container for up to 1 month. However, if freezing, I strongly recommend omitting the fresh raspberry garnish, as the fresh fruit can turn the delicate macaron shells soggy upon thawing.
-
SERVING: Always bring these Raspberry Matcha French Macarons back to room temperature before serving for optimal flavor and texture enjoyment.

Storage and Serving Tips for Perfect Macarons
Once your beautiful Raspberry Matcha French Macarons are assembled, the waiting game begins. While it’s tempting to dive right in, allowing them to “mature” in the refrigerator overnight is a crucial step for optimal flavor and texture. This resting period allows the filling’s moisture to soften the shells slightly, creating that signature tender-chewy consistency that makes macarons so irresistible. Stored in an airtight container, these delightful treats will remain fresh in the refrigerator for up to 3 days.
If you wish to extend their shelf life, macarons freeze exceptionally well. You can store them in an airtight container in the freezer for up to one month. Just remember, as mentioned in the recipe instructions, if you plan to freeze your macarons, it’s best to omit the fresh raspberry garnish from the center of the buttercream. Fresh fruit can release moisture during the thawing process, potentially making your perfectly crisp shells soggy. When ready to enjoy, always bring your frozen or refrigerated macarons back to room temperature for about 15-30 minutes before serving. This ensures the filling is creamy and the flavors are fully vibrant.
