Why These Mississippi Pot Roast Sliders Are a Must-Try

There’s a reason Mississippi Pot Roast Sliders have become an absolute favorite in my kitchen, especially when I’m looking for a delicious and efficient way to transform leftover pot roast. This recipe was directly inspired by our popular Instant Pot Mississippi Pot Roast, a recipe renowned for its incredible flavor and unmatched tenderness.

What truly sets these sliders apart is the incredible, pull-apart tender chuck roast. Whether prepared in an Instant Pot or a slow cooker, the slow cooking process allows all the classic Mississippi pot roast flavors—savory, tangy, and subtly spicy—to meld together perfectly. This results in a melt-in-your-mouth experience that is simply unparalleled. When you combine this flavorful, shredded beef with sharp, tangy pepperoncini and creamy provolone cheese, then sandwich it all between soft, slightly sweet Hawaiian rolls, you create a harmonious explosion of taste and texture. The sweetness of the rolls provides a delightful contrast to the savory, umami-rich beef and the zesty peppers, elevating these sliders from a simple snack to a truly unforgettable meal. They are not just a way to use leftovers; they’re a destination meal in themselves, perfect for any occasion that calls for comforting, crowd-pleasing food.

Ingredient Spotlight & Smart Substitutions

Understanding each ingredient and its role is key to mastering these sliders, along with knowing how to adapt the recipe to your preferences or what you have on hand.

The Roast: The heart of these sliders is, of course, the Mississippi Pot Roast. For the most flavorful and tender results, we highly recommend using our tried-and-true recipes. You can prepare the roast using our slow cooker Mississippi pot roast recipe, which is fantastic for busy days as it cooks unattended, perfect for taking to gatherings, or for meal prepping in advance. Alternatively, our Instant Pot Mississippi pot roast offers a quicker method, ideal if you’re hosting and need the roast ready in less time. Whichever method you choose, the key is to ensure your chuck roast is cooked until it’s fall-apart tender and easily shreddable, fully absorbing all the classic savory, tangy, and rich flavors that define a true Mississippi pot roast. The residual juices from the roast are also important; while you’ll drain most of them for the sliders, a little moisture ensures the beef stays succulent.

The Cheese: We’ve found that deli-sliced provolone cheese works beautifully here, offering a mild, slightly nutty flavor and exceptional melting capabilities that create a wonderfully gooey layer. However, the beauty of sliders lies in their adaptability! If provolone isn’t your preference or isn’t available, several other cheeses make excellent substitutes. Swiss cheese adds a distinct nutty and slightly sweet note. Muenster offers a creamy texture and mild flavor. Havarti is a buttery, smooth cheese that melts like a dream. For a classic, stretchy melt, mozzarella is always a solid choice. And if you crave a subtle kick, pepper jack will introduce a mild, pleasant heat that complements the pepperoncini well. Feel free to mix and match to discover your favorite combination!

The Bread: Sweet Hawaiian rolls are truly the perfect vessel for these sliders. Their signature softness and delightful sweetness provide an ideal contrast to the robust, savory, and tangy filling. The slightly dense yet fluffy texture holds up well to the moist beef and melted cheese without becoming soggy. While store-bought Hawaiian rolls offer unparalleled convenience, if you’re feeling ambitious and want to truly elevate your sliders, consider making our homemade Hawaiian rolls. They’re incredibly rewarding! Of course, if you prefer a different type of bun, mini brioche buns or even potato rolls could also work well, just be sure they are soft enough to complement the tender filling.

Pepperoncini Peppers: These tangy pickled peppers are an iconic component of the Mississippi pot roast flavor profile, lending a crucial briny, slightly vinegary punch with a subtle hint of heat that cuts through the richness of the meat and cheese. Using sliced pepperoncini ensures that every bite gets a burst of that zesty flavor. If you prefer a milder tang with less heat, sliced banana peppers are a fantastic alternative that will still deliver that essential pickled element.

Garlic Butter Topping: The final touch to these sliders is a simple yet incredibly effective garlic butter. Melting unsalted butter and mixing it with garlic salt creates an aromatic mixture that, when brushed over the tops of the Hawaiian rolls, transforms them into golden, savory perfection. This butter not only adds a beautiful golden-brown color and a glossy finish but also infuses a fragrant garlicky note that wonderfully ties all the flavors together. Using unsalted butter allows you to control the overall sodium content, especially since garlic salt already contributes saltiness.

Assembling these sliders is straightforward, especially if your Mississippi Pot Roast is already prepared. Let’s walk through the simple steps to create these irresistible treats.

  1. First, ensure your Mississippi Pot Roast is cooked to perfection, whether in your Instant Pot or crockpot. Once cooked and shredded, drain any excess liquid but keep the tender meat warm while you prepare the rolls.
  2. Preheat your oven to 375°F (190°C). This ensures the sliders bake evenly and the cheese melts perfectly.
  3. Using a sharp bread knife, carefully slice the entire block of Hawaiian rolls in half horizontally, separating the tops from the bottoms. This makes assembly much quicker and easier.

  4. Place the bottom layer of the sliced Hawaiian rolls into a 13×9 baking dish. They should fit snugly, creating a solid base for your sliders.

  5. Evenly layer the deli-sliced provolone cheese over the bottom half of the rolls. Make sure the cheese covers as much surface as possible for maximum meltiness.

  6. Generously pile the warm, shredded Mississippi Pot Roast on top of the cheese layer. Distribute it as evenly as possible so every slider is packed with flavor.

  7. Sprinkle the sliced pepperoncini peppers evenly over the beef. These tangy peppers are crucial for that signature Mississippi flavor profile.

  8. Carefully place the top layer of rolls back onto the filled bottom layer, pressing down gently to ensure everything is nestled together.
  9. In a small bowl, melt the unsalted butter and stir in the garlic salt until well combined. Using a pastry brush, generously coat the tops of the Hawaiian rolls with this aromatic garlic butter mixture. This step adds a golden color and an extra layer of savory flavor. You may not need to use all of the butter, depending on how thickly you apply it.

  10. Cover the baking pan tightly with aluminum foil and bake in the preheated oven for 15 minutes. This allows the cheese to melt and the flavors to meld beautifully. After 15 minutes, remove the foil and bake for another 5 minutes, or until the tops of the rolls are golden brown and lightly crispy.
  11. Once baked, remove the pan from the oven. Use two large spatulas or fish turners to carefully lift the entire slab of sliders out of the pan in one or two sections. Place them onto a large cutting board.
  12. Using a sharp Chef’s knife, carefully cut along the seams of the rolls to separate them into individual sliders. This ensures neat, uniform servings.
  13. Serve your Mississippi Pot Roast Sliders warm and watch them disappear! Enjoy the tender roast, tangy peppers, and melty cheese in every bite.

Frequently Asked Questions & Expert Tips for Perfect Sliders

Can I make these Mississippi Pot Roast Sliders ahead of time?

Absolutely! These sliders are excellent for making ahead, which makes them a perfect option for parties or busy weeknights. To prepare in advance, follow all the assembly steps up until you would add the foil to the pan. Once assembled, tightly cover the baking dish with plastic wrap or aluminum foil and store it in the refrigerator for up to 3 days. When you’re ready to bake, remove the dish from the fridge and allow it to come to room temperature for about 30-40 minutes before proceeding with the baking instructions. This ensures even cooking and melting of the cheese.

How do I properly store leftover sliders?

If you happen to have any leftovers (which is rare!), store them in an airtight container in the refrigerator for up to 4 days. When reheating, you can warm them in the oven at a low temperature (around 250-300°F or 120-150°C) until heated through for a crisper roll, or quickly microwave them if you’re short on time. Be mindful that microwaving might make the rolls a bit softer.

Expert Tips for Success:

  • Don’t Skimp on the Roast: Ensure your Mississippi Pot Roast is truly fall-apart tender. This is crucial for the texture and overall experience of the sliders. If it’s not tender enough, it won’t shred properly and can make the sliders tough.
  • Drain, But Don’t Dry: While you want to drain most of the cooking liquid from the pot roast to prevent soggy rolls, ensure the shredded beef still retains enough moisture to be juicy and flavorful. A little bit of the pan drippings mixed back into the shredded meat can keep it succulent.
  • Even Cheese Distribution: Spreading the cheese evenly ensures a delightful, gooey layer in every single slider. You can tear larger slices to fit or use pre-shredded cheese, though deli slices tend to melt more uniformly.
  • Generous Garlic Butter: Don’t be shy with the garlic butter! It adds an incredible depth of flavor and helps create that beautiful golden-brown, slightly crisp top on the rolls. Ensure every roll gets a good coating.
  • Cutting for Perfection: After baking, let the sliders rest for a few minutes before cutting. This helps the cheese set slightly, making for cleaner cuts. Using a long, sharp chef’s knife or serrated knife will yield the best results.
  • Customize Your Tang: The amount of pepperoncini peppers can be adjusted to your liking. Add more for a bolder tang and subtle heat, or less if you prefer a milder flavor.

  • 6 oz pepperoncini peppers sliced, or banana peppers for a milder taste
  • 4 Tbsp unsalted butter melted
  • 1 Tbsp garlic salt

Things You’ll Need

  • 13×9 baking pan
  • Pastry brush
  • Chef’s knife
  • Bread knife

Before You Begin

  • This recipe will yield 24 delicious sliders when using a full recipe of our Mississippi pot roast prepared in either the Instant Pot or crockpot. Each serving is considered 3 sliders. Please note that the nutrition facts provided below do NOT include the meat from the pot roast itself.
  • For a slightly different presentation and easier individual serving, you can choose to reduce the number of rolls to 18. In this case, separate each roll before adding them to the pan. This method may require you to use less cheese or cut the cheese slices to fit the individual rolls. Because the rolls won’t be as tightly packed, you’ll be able to easily remove individual sliders from the pan without needing to cut them after baking.
  • These sliders are fantastic for making ahead! You can assemble them completely, following all the steps up to adding the foil to the pan. Store the tightly covered baking dish in the refrigerator for up to 3 days. Before baking, remove the dish from the fridge and allow it to sit at room temperature for approximately 30-40 minutes for best results.
  • Store any leftover sliders in an airtight container in the refrigerator for up to 4 days. Reheat gently in the oven or microwave.
  • While we love deli-sliced provolone for its mild flavor and excellent melt, feel free to experiment with other cheeses. Swiss, Muenster, Havarti, mozzarella, or pepper jack are all great options that will bring their own unique character to the sliders.

The recipes on this blog are tested with a conventional gas oven and gas stovetop. It’s important to note that some ovens, especially as they age, can cook and bake inconsistently. Using an inexpensive oven thermometer can assure you that your oven is truly heating to the proper temperature. If you use a toaster oven or countertop oven, please keep in mind that they may not distribute heat the same as a conventional full sized oven and you may need to adjust your cooking/baking times. In the case of recipes made with a pressure cooker, air fryer, slow cooker, or other appliance, a link to the appliances we use is listed within each respective recipe. For baking recipes where measurements are given by weight, please note that results may not be the same if cups are used instead, and we can’t guarantee success with that method.
