They are the epitome of a perfect summer treat, ideal for lively luau parties, laid-back backyard barbecues, or simply when you’re craving a taste of the tropics. While one bar is often enough to satisfy even the most persistent sweet tooth, we won’t tell if you decide to enjoy another (or two!).

The Allure of Tropical Flavors in Every Bite

These dessert bars are a celebration of bright, refreshing fruit combinations. The base is a tender, buttery crust that provides the perfect canvas for the luscious, fruit-filled topping. We’ve crafted these particular bars using a harmonious blend of chewy dried apricots, juicy crushed pineapple, and the invigorating tang of orange juice. This trio creates a filling that is both sweet and slightly tart, offering a complex flavor profile that keeps you coming back for more. The top layer, a smooth and shiny orange-zested glaze, adds another dimension of citrusy sweetness and a beautiful visual appeal, making these bars as lovely to look at as they are to eat.

Customizing Your Tropical Dessert Bar Experience

One of the best aspects of these Tropical Dream Dessert Bars is their versatility. While our chosen combination of dried apricots, crushed pineapple, and orange juice is truly divine, this recipe is incredibly adaptable. Feel free to experiment with other tropical fruits to truly make them your own! Consider adding finely diced dried mango or papaya for an extra layer of sweetness and texture. A splash of passion fruit juice or a hint of lime zest in the filling can introduce a brighter, more exotic note. If you’re feeling adventurous, you could even incorporate a small amount of shredded coconut into the crust or filling for an added tropical dimension. Don’t be afraid to play with different fruit combinations; the possibilities are endless!

Essential Tips for Flawless Dessert Bars

Achieving perfectly set and easily sliceable dessert bars often comes down to a few key steps. Here’s a crucial hint for success: **Make sure these bars are allowed to sit and cool completely before attempting to cut or move them.** Patience is key! The filling needs time to firm up as it cools, preventing crumbling and ensuring clean, beautiful squares. If you’re short on time and need them to set faster, a stint in the refrigerator can work wonders. Chilling the bars for an hour or two will help them firm up significantly, making them much easier to handle and cut into neat portions. This also enhances their refreshing quality, especially on a hot day. The texture of the crust also benefits from complete cooling, becoming crispier and less likely to break apart. So, resist the urge to dive in too soon, and you’ll be rewarded with perfectly structured, delicious dessert bars!

Beyond cooling, consider the quality of your ingredients. Using fresh orange zest and juice will dramatically enhance the flavor of both the filling and the glaze. When it comes to the crushed pineapple, ensure it is thoroughly drained to prevent an overly wet filling, which could affect the bars’ texture. For the crust, using cold, cubed butter is essential for a tender, flaky result. Over-processing the crust ingredients can lead to a tough crust, so pulse just until coarse crumbs form.

These Tropical Dream Dessert Bars are not just a treat for your palate; they are also a feast for the eyes. Their vibrant colors and inviting aroma make them a standout addition to any dessert spread. Whether you’re hosting a themed party, looking for a unique potluck contribution, or simply want to brighten a regular weeknight, these bars fit the bill perfectly. They offer a delightful contrast of textures – the crisp crust, the soft and chewy fruit filling, and the smooth, sweet glaze – creating an unforgettable dessert experience. Enjoy crafting and savoring these wonderful treats!

Ingredients

Crust

  • 2 cups unbleached all purpose flour
  • ¼ cup plus 2 tablespoons powdered sugar
  • teaspoon baking powder
  • 2 sticks 1 cup cold unsalted butter, cubed

Tropical filling

  • 1 cup chopped dried apricots
  • cup orange juice
  • 4 eggs
  • 1 ½ cups sugar
  • ½ teaspoon vanilla extract
  • ¼ cup plus 2 tablespoons all purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup drained crushed pineapple

Glaze

  • 2 cups powdered sugar
  • 2 tablespoons unsalted butter melted
  • 2 teaspoons orange zest
  • 2-3 tablespoons orange juice

Instructions

  • Preheat oven to 350°F (175°C) and line a 13×9 inch baking pan with foil, ensuring the foil extends over the edges for easy lifting. Lightly spray the foil with cooking spray.

For the Crust

  • In the bowl of your food processor, pulse to combine the flour, powdered sugar, and baking powder. Add the cold, cubed butter all at once and process until coarse crumbs are formed and the dough just begins to come together. Transfer the crumb mixture into the prepared pan and press it evenly into the bottom. Bake in the preheated oven for 15 minutes, or until the crust is a light golden brown. Allow the crust to cool completely on a wire rack.

For the Filling

  • Combine the chopped dried apricots and orange juice in a small bowl and set aside to soften while preparing other ingredients.
  • Wipe out the food processor bowl and add all four eggs. Pulse a few times to lightly beat the eggs. Add the granulated sugar and process for one minute until well combined. Incorporate the vanilla extract and pulse briefly. Add the remaining flour (¼ cup plus 2 tablespoons), baking powder, and salt, pulsing a few times until just combined. Finally, add the softened apricot mixture and the well-drained crushed pineapple, pulsing quickly a few times just to integrate. Pour this tropical mixture evenly over the completely cooled crust and spread it gently. Bake for 25-30 minutes, or until the filling is set and the edges are lightly browned.
  • Remove the pan from the oven and place it on a wire rack. Allow the bars to cool completely in the pan before cutting them into squares. This step is crucial for preventing crumbling and achieving clean cuts.

For the Glaze

  • In a small bowl, combine the powdered sugar, melted butter, orange zest, and one tablespoon of orange juice. Stir well until smooth. Gradually add small amounts of the remaining orange juice, a teaspoon at a time, until you achieve a thick, drizzling consistency that is not too thin. Drizzle the glaze artfully over individual squares of the cooled dessert bars. Allow the glaze to set completely before serving for the best presentation and taste.

The recipes on this blog are tested with a conventional gas oven and gas stovetop. It’s important to note that some ovens, especially as they age, can cook and bake inconsistently. Using an inexpensive oven thermometer can assure you that your oven is truly heating to the proper temperature. If you use a toaster oven or countertop oven, please keep in mind that they may not distribute heat the same as a conventional full sized oven and you may need to adjust your cooking/baking times. In the case of recipes made with a pressure cooker, air fryer, slow cooker, or other appliance, a link to the appliances we use is listed within each respective recipe. For baking recipes where measurements are given by weight, please note that results may not be the same if cups are used instead, and we can’t guarantee success with that method.
