A Lifelong Dream: My First Trip to Florida

For as long as I can remember, Florida, and specifically its enchanting Keys, held a prominent spot on my travel bucket list. My high school years were filled with stories from classmates who flocked to Florida for spring break, returning sun-kissed and relaxed. For me, however, such a lavish family vacation was simply beyond our means. My parents were divorced, and the financial realities of our lives meant those dreamy trips remained just that – dreams. Each year, as my friends recounted their adventures, I quietly vowed that one day, I too would experience the magic of Florida. That day finally arrived, and it was even more profound than I could have imagined.

Disney CastleAs many of you know, I had the incredible opportunity to attend the Food Blog Forum, a fantastic food blogging conference, back in March. Thanks to the immense generosity of Disney World and a host of other wonderful sponsors, this long-awaited trip became a reality. It was my very first time setting foot in Florida, and the excitement was palpable. The conference itself was an inspiring whirlwind of learning and networking, but it was just the beginning of my unforgettable Floridian adventure.

Unforgettable Hospitality and the Joy of Friendship

Beyond the conference, there’s another person I must wholeheartedly thank for making this trip truly special: my dear friend, Jodi. She opened up her home and her heart to my entire family – all seven of us! After the conference concluded in Orlando, we piled into our rental van and embarked on a picturesque 3 1/2-hour drive to Jodi’s place, where we were fortunate enough to stay for two more nights. It was an absolutely incredible experience to finally meet Jodi in person. We had been collaborating online for over four years, working for the same company, and during that time, our professional relationship blossomed into a deep and cherished friendship. Meeting her face-to-face, sharing laughter and stories, solidified an already strong bond. I truly adore her.

As you can probably imagine, with seven of us, my kids quickly made themselves at home and completely took over her living room with their energy and enthusiasm! Jodi’s incredibly generous hospitality meant we had some precious extra time to explore more of Florida before we had to begin our long journey back home to Wisconsin. It was a blessing that allowed us to create even more lasting memories.

Upon our arrival, Jodi and her wonderful husband, Mike, immediately welcomed us with a fantastic meal. Feeding seven hungry travelers is no small feat, and they did so with such warmth and ease. Their kindness truly set the tone for the rest of our stay, making us feel completely at home.

The evening unfolded beautifully. We spent hours unwinding in their peaceful backyard, mesmerized by the tranquil canal that flowed directly behind their property. It was a perfect opportunity to simply kick back, enjoy the warm Florida air, and savor the company of good friends. The casual atmosphere and heartfelt conversations were exactly what we needed after the busy conference.

We even had an unexpected visitor during our relaxing evening: a curious little lizard decided to stop by and say hello, adding a touch of Florida’s unique wildlife to our backyard gathering. It was a charming moment that highlighted the natural beauty surrounding us.

Did I mention that Jodi is also the proud guardian of Muscovy Ducks? Their story is truly remarkable and speaks volumes about Jodi’s compassionate spirit. In fact, her blog, appropriately titled My Muscovy Ducks Tale, chronicles the entire journey. She shares how the humane society had advised that abandoned eggs wouldn’t survive without their mother, suggesting they be placed in the freezer. But Jodi, with her unwavering belief in life, defied those expectations. Her blog beautifully recounts how she nurtured those eggs, proving everyone wrong, and leading to a wonderful, happy ending for her adopted duck family. It’s a heartwarming testament to her character.

Exploring the Enchanting Key Largo

Thanks to Jodi’s immense hospitality, our base was close enough to allow us to visit Key Largo, a destination I had always longed to see. It was only a little over an hour’s drive from her home, making it a perfect day trip. Had it not been for her generosity, our Florida adventure would have concluded in Orlando, and we would have regrettably missed out on experiencing more of Florida’s breathtaking coastal beauty.

Our first stop in Key Largo was an exciting glass-bottom boat tour. The video footage I captured is a bit noisy from the wind and slightly shaky from the gentle bumps of the water, but it truly captures the essence of what was a magnificent day! Peering through the glass bottom, we were treated to a mesmerizing view of the vibrant marine life below – colorful fish darting amongst the intricate coral reefs. It was an absolutely fabulous experience to witness the underwater world, and simply being out on the open ocean, soaking in the serene vastness, was outstanding.

We decided it was best to forgo the snorkeling for another time and instead take a scenic drive to explore what else Key Largo had to offer. Unfortunately, we simply didn’t have enough time to drive all the way down to the furthest points of The Keys, so that grand adventure will have to wait for another visit. However, our spontaneous drive led us to a delightful discovery: a small, almost hidden parking lot that could only accommodate about six cars. It was marked simply as “Annie’s Beach.”

If you’ve ever driven south through Key Largo towards the other Keys, you’ll know that the landscape is predominantly ocean on both sides, with just a narrow strip of land in between. Finding an empty parking spot, especially for a hidden gem like Annie’s Beach, is a rare opportunity, and we were quick to seize it!

From the parking lot, a charming wooden bridge extended into the distance, serving as a walking path. We eagerly ventured along it, wondering how far it would take us. The path itself was a peaceful journey through the mangroves, offering glimpses of the clear turquoise waters.

Along the length of this scenic path, we discovered several inviting entrances leading directly to the water, each one beckoning us closer to the tranquil ocean. It felt like finding secret gateways to paradise, each offering a unique perspective of the stunning coastal environment.

And these entrances led to breathtaking scenes like the one captured here – pure, untouched beauty. The calm, clear water, the gentle sway of the palm trees, and the warm sunshine created an idyllic setting. It was a moment of pure bliss, a true tropical paradise.

I genuinely wished I could have stayed there forever, immersed in that peaceful beauty. But, as with all good things, the trip had to come to an end, and I knew that eventually, I would see the familiar skyline of Chicago outside my window once more. Goodbye, beautiful Florida, until we meet again. Especially now that I know I have an amazing friend with a place to crash! 😉

Bringing the Sunshine Home: Crafting the Key West Grilled Chicken Salad

Even though I’ve left the sun-drenched shores of Florida, I can always drift back to those cherished memories by making this delightful grilled chicken salad. It’s a vibrant dish packed with the essence of the Keys: sweet mandarin oranges, crunchy cashews, a medley of dried tropical fruits, and, of course, perfectly marinated grilled chicken. The secret to the chicken’s incredible flavor lies in the marinade. I adapted it from a fantastic recipe called Key West Grilled Chicken found on Grocery Budget 101. It’s genuinely good stuff, though I found that my chicken benefited from a longer marination time to truly absorb all those incredible flavors. A helpful tip I discovered: poking the chicken breasts a few times with a fork before marinating allows the flavors to penetrate even deeper, ensuring every bite is bursting with taste.

For the dressing, I discovered a wonderful option at my local market that perfectly complemented the tropical flavors of the salad. I’m generally not a heavy dressing person; a light drizzle is all it takes to enhance the ingredients without overpowering them. However, you can certainly experiment with your favorite citrusy vinaigrette or a light honey-lime dressing to truly make this salad your own. The goal is to highlight, not mask, the fresh and vibrant components.

The recipes on this blog are tested with a conventional gas oven and gas stovetop. It’s important to note that some ovens, especially as they age, can cook and bake inconsistently. Using an inexpensive oven thermometer can assure you that your oven is truly heating to the proper temperature. If you use a toaster oven or countertop oven, please keep in mind that they may not distribute heat the same as a conventional full sized oven and you may need to adjust your cooking/baking times. In the case of recipes made with a pressure cooker, air fryer, slow cooker, or other appliance, a link to the appliances we use is listed within each respective recipe. For baking recipes where measurements are given by weight, please note that results may not be the same if cups are used instead, and we can’t guarantee success with that method.
