Ingredients
For the Orange Carrot Soup
- 1 tbsp extra-virgin olive oil
- 1 onion, peeled and chopped
- 2 cloves garlic, peeled and chopped
- 1 tsp ground coriander
- ½ tsp ground turmeric
- 2 lb carrots, peeled and chopped
- 4 cups vegetable stock
- 1 tsp kosher salt
- 1 Navel orange, zested, then peeled and chopped (see note)
- ¼ cup tahini (ground sesame paste)
To Serve (optional)
- Crushed pistachios
- Toasted sesame seeds
- Fresh coriander leaves

For the Orange Carrot Soup: In a large pot set over medium heat, add the olive oil and onion and cook, stirring occasionally, until the onion is translucent and softened, about 3 to 5 minutes. Add the minced garlic, ground coriander, and ground turmeric. Stir well and cook for about 1 minute until fragrant. Add the chopped carrots, vegetable stock, and kosher salt. Increase the heat to high and bring the mixture to a rolling boil. Once boiling, reduce the heat to low, half-cover the pot, and simmer gently for 25 minutes, or until the carrots are exceptionally tender.

Using an immersion (stick) blender, process the soup directly in the pot until it reaches a completely smooth and creamy consistency. Alternatively, transfer the soup in batches to a standard blender and process until smooth. Be cautious when blending hot liquids. Taste the soup and adjust seasoning with additional salt or a squeeze of fresh orange juice, if needed.
